D&D Chocolates Limited

D & D Chocolates is a family run business, based out of Nuneaton, they produce Carob and Dairy Free Chocolate.

D & D Chocolates was started in the late 1980’s by Michelle Berridale-Johnson, the well known author of allergy cook books and the founder of the Foods Matter magazine, now an extensive family of websites.

FoodsMatter is an extensive resource for the medical profession as well as those with a personal interest in allergic conditions.

The Inside Story is the allergy care magazine for the medical profession as well as those with a personal interest in allergic conditions.

As the demands of editing and publishing such an essential magazine took over, Michelle reluctantly was forced to relinquish her interest in and D & D Chocolates.  The business was acquired by Barbara Burgess, whose son, like Michelle’s, also suffers from a dairy allergy.  The two businesses remain in close contact which is beneficial for both the D&D customers and Inside Story readers.

D & D are now registered with the Vegan Society and all our products are produced in a totally nut free, dairy free and gluten free unit. D & D can proudly consider itself one of the main dairy and gluten free confectionery companies in the UK today.

I am excited that we have as a company been able to produce such a great tasting product as we had set our hearts on producing a dark chocolate that was not only mild in texture (we use only 55% cocoa mass) but suitable for children and delicious to taste.Feedback from our customers tells us that they really like the taste so that makes us very happy.We are now confident that we can produce really excellent fondants, drops and other exciting products with this style of chocolate.

Dairy Free Chocolate and Siesta Carob

In 2000 D & D became a Limited Company and took over the manufacture and production of carob products, and in April 2001 launched the best-selling Siesta Carob bars.

The company’s main objective is to provide confectionery for people who suffer from dairy intolerance and gluten problems, particularly children. The company’s range of moulded confectionery products are available throughout the year the special festive items being introduced at Christmas, Easter, New Year and Valentine’s Day.

Dairy Free Chocolate

Our Vegan dairy free chocolates are all hand made.  Our products are all manufactured in our nut free, dairy free and gluten free environment.  Our products are registered with the Vegan Society and are suitable for vegetarians, vegans and all lovers of dairy free chocolate.  Our chocolate is now also Soya Free.  Perfect for anyone with milk allergy.

Chocolate was first brought to Europe after the conquest of South America where the Aztecs consumed it in the form of a sweetened drink which was believed to increase wisdom and boast energy levels.

Made to the exacting standards of continental style chocolate, D & D have been able to manufacture a truly dairy free product. Our chocolate is completely soya free.

SIESTA CAROB – GENERAL PRODUCT INFORMATION

Carob powder is produced from the pods of the tree Ceratoma Siliqua (a member of the pea genus) grown extensively in the Mediterranean. It is naturally sweet, contains no caffeine, no theobromine, and no oxalic acid. Carob contains the digestion-regulating fibres pectin and lignin. It also contains vitamins A and D together with three important B vitamins and is also high in calcium and trace elements. Once harvested the pods are separated from the beans and roasted, milled and sieved to produce the powder.

To produce our carob confectionery the powder is mixed with non-hydrogenated vegetable fats, inulin and sunflower emulsifier, (which is tested at source to be GM free) to produce the finished naturally sweet and gluten free Siesta Carob product.

The taste of the carob powder is controlled by the amount of roasting it receives, the longer the roasting, the stronger the taste. The roast in the Siesta recipe specification is medium, which retains much of the natural sweetness of the pod and a softer taste.

Any flavourings used are natural, not nature identical (we do not use chemical equivalents). No artificial flavourings, colourings or preservatives are used within any of our recipe schemes.

Apart from the popular Siesta carob bars D & D Chocolates also makes a range of seasonal items (Christmas and Easter) to ensure that those who have a need for this product are not neglected.

The aim of D & D Chocolates is to produce the most natural and taste acceptable alternative to cocoa based confectionery for those who prefer it to, or cannot eat, conventional dairy based confectionery products.
